BANANA BLUEBERRY MUFFINS

I tried a new recipe this morning, delicious moist muffins. Here's the recipe so you can find out how yummy they are for yourselves. I wish I could share some of the actual muffins over the internet. (I used rolled oats and frozen blueberries.)

BANANA BLUEBERRY MUFFINS

1 cup buttermilk
2/3 c. wheat bran
1 large egg
¾ c. brown sugar
5 tablespoons oil
1 ripe banana, mashed
1/2 teaspoon vanilla
¾ c. flour
2/3 rolled oats or oat bran
1 teaspoon baking soda
1 teaspoon baking powder
½ c. chopped walnuts
1 c. blueberries

1. Preheat oven to 375 . Grease a muffin pan or line with paper muffin cups.
2. In a medium bowl, mix buttermilk with wheat bran. In another bowl, beat together egg, sugar, oil, banana and vanilla.
3. In a large bowl, stir together flour, oats, baking soda and baking powder. Stir buttermilk mixture and egg mixture into flour mixture until flour is just moistened. Stir in walnuts and blueberries. Spoon batter evenly to make 12 muffins. ( I made 15)
4. Bake in preheated oven for 20 minutes.

Those sound delicious! Now I need to get some blueberries.

those sound yummy...I just have to remember to get blueberries. Scott would LOVE these.
